Cooking while you are pregnant can be difficult. For one, some scents induce vomiting. But the most difficult thing for me, is the fatigue. By late afternoon, I just want to curl up in bed, not start preparing dinner. So, I am very grateful for recipes such as this crock-pot stew. I got the recipe from one of my sisters, and I loved it when she made it. When I tried to make it a few months ago, it turned out way too salty, but it seemed that the culprit was a packet of generic onion soup mix, so I decided to try again. Last night, with the Lipton Onion Soup mix, it turned out great! So, I thought I'd share, because it's easy and delicious!
Crockpot Beef Stew
1 can cream of celery soup
1 can cream of chicken soup
1 small can tomato sauce
1 package Lipton onion soup mix
Mix together, then add:
1 lb. stew meat
potatoes (2-3 large, cubed)
carrots (1 1/2- 2 cups)
Cook on Low for 8 hours
If you aren't picky about meat, you can just dump in the stew meat. I am more picky, so I thawed it enough to be able to cut it, and trimmed it more to my taste. I also prefer smaller chunks of beef, so I cut it down in size. As far as the potatoes and carrots, it's really just a matter of preference. I didn't really measure the carrots, I just think that's about how much I threw in. Enjoy! :)

Hmm. . . I should try it sometime! I like the "easy" part! Haha! Any ways, I keep not getting to run into you at church, and I've wanted to tell you two things:
1. You sing so beautifully, and it was so fun to sing with you! We should do it more often :)
